“I first made Tunisian cake several years ago and couldn’t believe how delicious it was! White chocolate ice cream is one of my favourite ice creams and I have given it a naughty twist by caramelising the chocolate. To finish this dish, I use the sweetest, fattest, juiciest plums and roast them so they go soft and even sweeter, then add ripped leaves of fresh mint.”
